Yum-O

In the past couple of weeks the extent of my cooking has been reheating the leftovers from meals that people have brought us. It has been wonderful and yet unsettling for someone like myself who is always cooking and who finds making meals relaxing. So finally tonight I took the time to make a recipe that had caught my eye in the latest Southern Living, partially because it was something I had never made but love (risotto) and partially because it looked so darn good. Risotto is not something that you just whip up - it takes a bit of time to make but it is well worth the effort. Chad and I both thought the flavors in this big bowl of creamy-yumminess were delicious and I can see us having it again in the future. Just beware - this recipe makes A LOT. I could have easily halved this recipe and we would have still had plenty left over. Also, I didn't have fontina cheese and just used cheddar and it worked fine. So if you have the time, make this up some time soon!

  1. I definitely want to try this! I love risotto as well and make it fairly often. Last weekend I made a basic risotto and added in some toasted pecans and served it with baked honey-pecan chicken and a nice salad. Yummy! Thanks for sharing!
